Use this neat little Java applet to work out your engine capacity and compression ratio. If you're not sure how much deck height you need in order to achieve your desired compression ratio, or how much volume you'll need in the combustion chambers, this will tell you. It works for all engine types - not just VW. There's also a metric to imperial converter (and vice versa), thrown in for good measure.

For instance, if your building a 2007cc engine and you know your cylinder heads have a combustion chamber volume of 56cc, to determine the deck height required for a compression ratio of 8.5:1, plug in the following numbers: bore=90.5mm, stroke=78mm, combustion chamber volume=56cc and desired compression ratio=8.5. Click the 'deck height' button and you'll be given the answer: 0.067" (or 1.69mm).
